Evangelion has next to nothing to do with judeochristian or kabbalistic beliefs, or even symbolism, and everything to do with absurdism.
Much as I hate to say it, given my own propensities towards similar ends, you're overthinking it.

Quotes about catgirls have nothing to do with religion and Evangelion.

Synapsid is giving the religious mumbojumbo in NGE way too much credit, but by the same token I wouldn't blow it off COMPLETELY. (There is an actual group of religious zealots in the show itself, and all.)

That's entirely right! Ironically I sent in my term paper for Humanities just a few days ago, the Topic was Existentialism, and I managed to squeeze Hideaki Anno in ^_^. Still Soren Kierkegaard, the father of absurdism, was a theologist. Even if the concepts are meaningless, they may still have symbolic value, who knows if Anno looked into Cabalic references before working on the designs.
